If menu planning makes you want to stab people, or you just plain don’t have time, I’ve got you covered with This Week’s Eats. It features 5 potato inspired recipes to keep your tastebuds AND your bellies happy.
Ah, January. The month of fresh beginnings and a beautifully clean slate. Whether you’re looking to map out the year ahead or focus solely on what you’re going to feed yourself (and your family), anything is possible.
Want to eat more leafy greens? Great.
Want to try out Paleo or do a Whole30? Fantastic.
Want to eat your weight in potatoes? GO RIGHT AHEAD.
(Because I clearly am.)
Our menu this week features 4 different tubers. The lovely sweet potato, the reliably good russet, the creamy yukon gold, and our household favorite of baby reds. Mmm. Mmm. Mmm. It almost feels like there aren’t enough days in the week to fit in all of that carby goodness. BUT THERE IS. And it’s paired with delicious dishes like buffalo cauliflower bites and chana masala.
My mouth is watering just thinking about it all of those potato inspired recipes.
