Meal Prep Monday is a weekly series where I share all of the food I’m making for the entire week. Because I am well and truly over spending my time and energy making dinner each night, only to have to make something else for my kids. This week is all of the different ways I’ve been cooking ground beef and chicken.
I think it’s safe to say that ground beef and chicken have been the absolute stars of my meal prepping lately. They are quick and easy to cook up and take on whatever sauces I cook them in super well. And since rice is a major food group in our house, pairing them with a side of rice (jasmine or cauliflower rice pilaf) has been a no-brainer.
The good news is, The Husband is also a big fan, so that’s made for lots of yumminess in the menu day after day.




Some of our favorite meals with ground beef and chicken (you could also do turkey or pork if that’s what you like!):
- Firecracker Ground Chicken Bowls
- Korean Beef Bowls
- Meal Prep Ginger Beef Bowls
- Hot Honey Beef or Chicken Bowls
- WW Turkey Chili
On the menu for this week:
- Crispy Honey Garlic Ground Beef Rice Bowl – I’m definitely on a honey kick after the hot honey ground chicken bowls I made last week. I made a batch of sugar-free honey and am trying my best to use it up before it goes bad.
- Chicken Zucchini Poppers — I make this one minus the creamy cilantro sauce because I’d rather eat actual soap than cilantro.
- Peanut butter, banana, and chocolate chip oat cookies — I was a bit skeptical about this one because how the heck do those four ingredients come together to make a cookie?! But they do. And it makes for a not-overly-sweet treat that I’ve been enjoying this past weekend. I have them stored in the freezer so they don’t spoil and it’s been a true delight to enjoy one each night after dinner.
- Air-Fryer Falafel — These are seriously the best. You do need to use dried garbanzo beans that are soaked overnight, so make sure you plan accordingly. I promise it’s worth the effort. I also ran out of parsley, so just threw in some salad greens instead and it was delightful.
