    Undressed Chicken Meatballs

    If you’re looking for an easy dinner or something to batch cook for lunches, these undressed (AKA plain) chicken meatballs are IT. They are extremely versatile and can be dressed up or down based on your preferences. 

    One thing I struggle with a lot on the keto diet is lunch. I never want to put in full effort and after getting lunch ready for the kids, I have little energy to do much for myself. So I stand aimlessly in front of the refrigerator for the next 20 minutes trying to figure out what the heck to make for myself. It never ends well and half the time I just skip lunch and go straight for the keto-friendly snacks. 

    In an attempt to prevent this exact scenario from happening, I decided to make a big batch of chicken meatballs so that I could stop standing in front of the refrigerator and start enjoying lunch again. I got about 20 meatballs out of my first batch, meaning I have 5 solid lunches of 4 meatballs each this week. I look forward to trying them with new sauces each day to see how it goes. 

    So far, eating the chicken meatballs plain is delightful. As is eating them with hot sauce (affiliate link). Next up, keto teriyaki sauce. I bet a low-carb/keto BBQ sauce would also be perfection.

    Undressed Chicken Meatballs

    Ingredients
      

    • 2 lbs ground chicken see notes
    • 1/4 cup onion chopped
    • 1/4 cup bell peppers chopped
    • 1 tsp (1 clove) garlic minced
    • 1 tsp salt
    • 2 tbsp ground flaxseed meal

    Instructions
     

    • Preheat oven to 425°F/220°C. Line a rimmed baking sheet with parchment paper or a silicone liner and set aside.
    • Combine all ingredients in a mixing bowl and mix until fully incorporated. Form into balls and place on your prepared baking sheet. I got 20 out of my batch and they were on the bigger side.
    • Transfer to oven and bake for 20-25 minutes or until internal temperature reaches 165°F/74°C.
    • Serve with your favorite sauces or enjoy as is!

    Notes

    I’ve started to make my own ground chicken after not being able to find it in the grocery store reliably. Turns out it’s SUPER easy and way more cost effective than buying it from the store. All you have to do is add chicken to your food processor and blend it until there are no longer any big chunks left (about 2 minutes total).
