Clementine vinaigrette is a super flavorful and light salad dressing that captures the sweet yumminess of clementines beautifully. Perfect for summer salads or as a marinade for chicken or fish.
Zest and juice of 2 clementines (about 1/4-1/3 cup)
1tbshoney
2tbsapple cider vinegar
1/3cupolive oil
1tspsunflower seed butter (or other nut butter)
1/2tspgarlic powder
Salt and pepper to taste
Instructions
Combine all ingredients into a salad dressing cruet or jar with a lid and shake to combine. Serve atop your favorite salad or use as a marinade for chicken or fish.
Notes
Zesting clementines is a bit tricky since there is relatively little pith between the peel and the fruit. What you do get in terms of zest will be small but MAN does it impact the flavor in a really positive way.
